CONGRATS TO THE NEW FOREST’S FAB CATCH COMPANY

A huge congrats to Hayley and the team from The Fabulous Catch Company, who showcased her zero waste crabcakes as part of Channel 4 series ‘Aldi’s Next Big Thing’ presented by Chris Bavin, now in its second season. Hayley was picked from hundreds of applicants competing for the coveted contract to stock Aldi stores nationwide.

From dinners and baked goods to party foods and confectionery, each episode sees hopeful suppliers compete for a space on Aldi’s shelves, before Julie Ashfield, Managing Director of Buying at Aldi UK, decides on a winner which will appear as a Specialbuy in over 1,000 stores.

Impressing with its flavour, attractive packaging and sustainability credentials, The Fabulous Catch Company’s Crabulous Crabcakes, a Great Taste Award winner, beat five other hopefuls to win the coveted order!

Loaded with tasty, brown crab meat, the cakes include leeks, a smattering of chilli, some fresh parsley, lemon juice and seasoning. Julie agreed the taste was great, but as a four-pack weighing less than Aldi’s twin variety and at double the price of its gastro version, Hayley needed to scale up her product, not lose consistency and deliver in volume if she was to win the order.

Hayley took on board Julie’s feedback and wowed with her revised crabcakes, securing an order to supply Aldi with 50,000 units. Presented as a bigger, twin pack, the judges were delighted with the texture and taste, agreeing the flavour had even managed to surpass the first batch.

Hayley first spotted an opportunity in 2012 when she was asked to help a group of fishermen on the Isle of Wight sell their brown crab waste. Brown crab meat is found in the body of the crab and with a pate-like texture, is often treated as a byproduct, with the white meat favoured for its texture.

Hayley’s mission was to create a ‘sustainable revolution’, supporting the declining British fish industry. It was then that she set up her fish company, using this surplus element to give her fishcakes their fabulous flavour. Having started crafting cakes in 2012, the entrepreneur now has a small fish factory in the New Forest with 12 employees, supplying local farmer’s markets, farm shops and now Aldi.

Hayley Elston, Owner, The Fabulous Catch Company, says: “It’s an amazing feeling to win, I even cried! An absolutely magical moment that will change my business forever. We have worked so hard to get this product where it is today. What started out as helping a group of fisherman deal with their crab waste has led to our products landing in stores across the country – I am utterly delighted!”

Julie Ashfield, Managing Director of Buying at Aldi UK, says: “Not only did Hayley impress with her crabcakes, which are absolutely delicious, but also with her commitment to reducing food waste. I was impressed at how she took on our feedback, whilst keeping the nuance of what they were to start with. We’ve ended up with a great product, that our shoppers will love.” We love Aldi’s commitment to support British suppliers. Last year, Aldi spent an additional £1.3 billion with British suppliers and growers, and they provide more than three quarters of all items sold in its stores.

The supermarket has also introduced a ‘Best of British’ section to its website, which includes a wide selection of groceries from meat to dairy products and everyday essentials, in a bid to help shoppers support British businesses.

The Fabulous Catch Company’s Crabulous Crabcakes (£2.29, 220g) are available in stores now. But shoppers need to get in quick for chance to try, as with all Specialbuys, once they’re gone, they’re gone!

What a world we’re living in at the moment! With lockdown easing we’ve seen a boom in bookings for holiday cottages, yacht charters and day visitors to The New Forest. The appetite for a break within the safety of our own country and good old ‘staycations’ is truly on the up.

We’re pinching ourselves with excitement for local businesses and events happening around us, and we need to support them more than ever.

Are you planning a trip to the forest, or perhaps coming ashore by boat? The recently launched, Lymington based, company The Forest Foodie can make your trip as hassle free as possible. They deliver hampers and picnics of fresh produce, locally sourced directly to your holiday cottage, or to your marina in Lymington. Their hampers and picnics are delivered in cooled temperature-controlled boxes so you don’t have to worry about fridge space, so a shout out to the yachties who know this all too well. Their products range from ‘The Solent’ which is their version of surf n’turf with fresh lobster, fillet of beef, Hampshire sparkling wine, to ‘The Beaulieu’ which is a selection of wonderful local cheeses, wine and pickles. For a picniccy vibe they have partnered with Chalkstream Farm to source fresh smoked trout, smoked trout pâté, and paired these with fresh crab and king prawns. They have carefully selected some great ‘thirsty bits’ also including a premier cru Chablis, Châteauneuf du pape and magnums of Aix-en-Provence.

Oyster Eating Competition; Ready, steady…oyster!

Can you tell your native from your Pacific oyster? Should you chew or swallow whole? Here’s our expert guide …

Oyster is the common name for a number of different families of salt-water bivalve molluscs that live in marine or brackish habitats. Many, but not all, oysters are in the superfamily Ostreoidea. Some types of oysters are commonly consumed cooked or raw, and are regarded as a delicacy. Some types of pearl oysters are harvested for the pearl produced within the mantle

Between 1972 and 2006, the Solent supported the largest native oyster fishery in Europe. In 1978, 450 vessels were involved in oyster fishing and 15 million oysters were removed in that year alone. However, since this peak, the oyster population has declined significantly and in 2013 the fishery collapsed.Oysters are ‘ecosystem engineers’ and beds contribute substantially to inshore shallow biodiversity and provide protection and nursery grounds for juvenile fish and other species. Oysters are also filter feeders, and clean waterways removing impurities such as nitrogen.

The two main types of oyster available from fishmongers in the UK are rock (or Pacific) and native oysters.

When picking oysters, look for those with tightly closed shells and avoid those with even the smallest opening. Fishmongers should hold a health certificate that lists the place of harvest and date of production, so if you’re worried about provenance, just ask. Oysters also vary in flavour and texture depending on the water in which they’re grown, so shop around if you want a particular taste profile.

Store oysters in the bottom of the fridge, rounded side down so they don’t leak any juice.

How to prepare an oyster

Closed oysters need to be ‘shucked’, which is something all fishmongers can do for you, but if you fancy taking it on yourself, it’s best to use a specialist oyster knife, which is short and blunt with a finger guard.

Hold the oyster very firmly in a thick cloth to protect your hands, then insert the knife into the hinge, or pointed end, of the oyster

Twist the tip of the knife into the hinge to get a very firm foothold. Once you feel the knife is securely in place, release the pressure from the knife and gently lever or twist the knife to break the muscle of the oyster – you can usually hear the ‘shucking’ noise as the two half shells part.

Loosen the opened oyster from the shell to make it easy to eat.

How to serve oysters

The customary approach to eating oysters is to serve them raw. Typically, raw oysters are served on the half shell with plenty of lemon for squeezing, Tabasco sauce and shallot vinaigrette (mignonette). The briney, sodium-rich flavour of oysters means they partner well with tangy Asian-style dressings

A note on the health benefits of oysters

Oysters are winners on the health front – low in fat and high in protein, they’re also packed with as much iron as red meat, making them a good alternative if you don’t eat meat. As for the aphrodisiac element, this comes from the fact oysters have high zinc levels – thought to be beneficial to male fertility.

The Lymington Seafood Festival is one of the highlights of the summer social calendar in 2023, bringing friends, family, and visitors together to sample Neptune’s larder and culinary delights. NO TIME TO WASTE….WE’VE SMASHED OUR RECYCLING TARGETS!

We all know we need to reduce what goes into landfill, so set ourselves a challenge of recycling as much waste as possible.

Festivals are messy, just look at what all those planet-loving millennials leave behind at Glastonbury. Plus, when we’ve had a few drinks putting rubbish in the right bin is for some a bridge too far. Especially when the floor will do.

We weren’t deterred by those headwinds and teamed up with Dorset waste specialists Junkosaurus to see what could be achieved.

Despite the weekend being a heatwave their team sorted through just over 4.8 tonnes of wrappers, fish heads and beer cups to help recycled a pretty impressive 3.2 tonnes of waste. That’s around 67% of our waste being reinvented into something new. It’s also higher than England’s leading council – St Albans – who top the tables recycling 64.2%.

Anything left over was sent to a ‘waste to energy’ plant to help power us through the winter blackouts.

Oh, as a guide, the New Forest, a national park and area of outstanding national beauty have a council who manage to recycle just 34.1% of all waste in 2020/21, sitting 262nd out of 338 in the national league tables.

A big thanks to Stephen Green and New Forest Litter Pickers who help keep the site looking immaculate. And, to everyone at the event who helped us recycle. We know we need bigger signs on the bins!

The Ambrose Buoys: 3 New Forest brothers
rowing the Atlantic to beat their Dad’s time!

In December 2022, three brothers from the New Forest will be rowing 3,000 across the
Atlantic Ocean in the Talisker Whisky Atlantic Challenge. They will be the first children of an
Atlantic rower to compete with their father’s time and at the same time will be raising funds
for well-regarded conservation charity Tusk.


Louis, Felix and Finn Ambrose, whose team name for the challenge is the “Ambrose Buoys”,
have been inspired to row the Atlantic ever since 2003 when their father, Hugo Ambrose,
competed in the Woodvale Atlantic Rowing Race. Rowing in a pair, Hugo crossed the
Atlantic in 59 days – and now his three sons aim to do it in 40 days!


“Hearing stories about the endeavour, witnessing first-hand the toll it took and experiencing
the atmosphere at the finish line has done little to quell our curiosity. In fact, as children, we
were so confident that we would not only take on the challenge but also surpass our father’s
time of 59 days, that we made a bet with him… for £5!”, says Felix.

The boys grew up in Lymington, attended Hordle Walhampton School and were regulars at
Salterns Sailing Club and Lymington Cricket Club. Although the trio now work and study in
London they regularly return home and can often be spotted at the Sea Water Baths, which
their father manages. This week they are delighted to have launched their boat, “Ambrosia”,
which is currently at Lymington Town Sailing Club.


The Ambrose Buoys will set off across the second largest ocean in the world from La
Gomera and row the 3,000 miles to Antigua unaccompanied. The brothers will row day and
night, swapping around the clock on two hour shifts to race their father’s time. The journey is
likely to take between 5 and 8 weeks of continuous rowing and will test the brothers’
psychological and physical strength.

This premier event in ocean rowing, dubbed ‘The World’s Toughest Row’, is the ultimate test
of physical and mental endurance, with up to thirty teams competing from around the world.
Throughout the crossing, the brothers will be at the mercy of the elements, potential

Louis, who has been nominated skipper by his younger brothers, said, “We are three
ambitious brothers who have always enjoyed challenging ourselves. The length of time that
this is going to take makes it unique, it’s just as much psychological as it is physiological and
as a result we are tailoring our preparation accordingly.”

Louis, Felix and Finn aim to raise £200,000 for the charity, Tusk, which for over thirty years
has been supporting progressive conservation action across Africa, tackling poaching,
habitat loss and human-wildlife conflict. “We were all in agreement about supporting Tusk. The outbreak of the Covid-19 pandemic has not only created a huge challenge for conservation, but has highlighted how connected we are to the natural world, and illustrated just how delicate that web is,” says Finn,
explaining why the brothers chose Tusk as their nominated charity. “From the oceans we sail on, through the habitats that provide the air we breathe, to the estimated 10 million plant and animal species that share our planet, there has never been a more crucial time to fight for the protection of all life on earth. In Africa, one of the most biodiverse areas on our planet, the relentless impact of the pandemic threatens to undo decades of conservation progress.”

Bear Grylls, the patron of Tusk, said, “The Talisker Whisky Atlantic Challenge pushes its
entrants to the absolute limit of their physical and mental endurance. As a proud patron of
Tusk, I have huge admiration for the Ambrose brothers who are not only taking on the
biggest adventure of their lives but following in their father’s footsteps and raising money for
an incredible cause.”

Challenge team in the lead up, during the challenge and after their arrival in Antigua.
