Chefs Stage

Our chefs stage welcomes some of the region’s most acclaimed and exciting chefs. Hosted by TV foodie Chris Bavin and we’ve a line-up to get everyone’s tastebuds buzzing with excitement.

LUKE HOLDER

We’re delighted to have Luke Holder, chef director at HH & Co, Lime Wood leading the culinary pack.

Learning the ropes at The Orrery, then the Oxo Tower he headed to the three-Starred Enoteca Pinchiorri in Florence which changed his philosophy on cooking. Since 2013 his food story has evolved alongside the incredible Angela Hartnett.

Luke believes passionately in ‘we are what we eat’. Sustainability resonates loudly at Lime Wood, something we’ll be championing at the festival where all chefs best in local and seasonal produce.

CHRIS BAVIN

Founder of the award-winning ‘The Naked Grocer, multi-talented broadcaster and writer Chris has been a leading figure in the UK’s food and consumer television for the last decade.

His roots first planted in the fruit & veg industry, Chris was an early champion of the ‘zero packaging, no plastic’ movement. He’s presented Tomorrow’s Food, The Truth About Food’ and ‘Shop Well for Less’ to name just a few.

A regular on the One Show and even popping up at the Chelsea Flower Show. Chris will be hosting our Chefs Stage and getting involved in the Cookery School.

Earned his stripes with Marcus Wareing at Petrus, then Le Poussin, under Alex Aitken’s wing and where he fell in love with sourcing and using seaonal and local ingredients. Now a private chef who’s chalked up 3 Rosettes and a nod from the Michelin Guide!

James Gunn, The Smoking Gunn

Friday 12th July

5.30pm – 6pm

One of the region’s most exciting young chefs. A scholarship at the Royal Academy of Culinary, then off to The Dorchester Hotel. He’s represented Great Britain, earned stripes at Auberge de Noves in France and the best New Forest Kitchens. His fine dining pop ups are one of the hottest tickets in town and he’s soon to launch a smoke house.

Hayley Elston, The Fabulous Catch Company

Owner and ‘fairy Cod mother’ of the Fabulous Catch Co who have recently turned TV stars to win Aldi’s Next Big Thing. Purveyors of the finest handmade fishcakes and other delicious fishy delights whilst putting sustainable and locally sourced produce at the heart of everything. What a bit of luck Chris Bavin will join her on stage!

Kamil Oseka, Head Chef, The Pig Hotel

The Pig Hotel and their ethos needs little introduction and there’s no one more passionate about growing, sourcing, foraging and even pickling than Kamil. Having built is first smoker at 7 years old a career in the kitchen was always going to happen and after a stint at Harbour Heights he followed James Golding to the Pig over 13 years ago taking over the reins last year.

Matt Tomkinson, Stanwell House Hotel

A former Roux Scholar who’s culinary journey has claimed two coveted Michelin stars. First at The Goose in Oxfordshire in 2008, quickly followed by a star at the Montagu Arms in 2009. Brief stints at Betony at The Kings Head in Whiteparish and Hamborough in Ventnor, Matt is now ‘back home’ and sure to be at the heart of elevating Lymington’s dining scene.

Dylan James, Careys Manor

Careys Manor kitchen is in talented hands with Head Chef Dylan James. After gaining scholarships and diplomas he headed to the famous Goring Hotel in Belgravia where the brigade achieved a coveted Michelin star. A stint in Cognac followed by joining esteemed chef Michael Caines at Lympstone Manor before heading back ‘home’ to now lead the Careys Manor team.

Callum Jellicoe, Balmer Lawn Hotel

His experience is rooted in the New Forest working his way up and through some of the best known kitchens including The Terravina learning the ropes from Michelin starred head chefs. Now second in command at Balmer Lawn Hotel where it all started over a decade ago.

Daniel Rogan, AO by Daniel Rogan

Daniel was inspired to follow in his three Michelin-star chef father Simon’s footsteps. Having trained with the likes of Marcus Wareing and Gordon Ramsay he launched AO by Daniel Rogan at Sunnyfields Farm to much acclaim. With an ethos connected to seasonal and about as local as you can get with the restaurant’s kitchen garden.

Colin Nash, The Retreat

Steve Hall, The Noisy Lobster

Steve has been at the helm of the Noisy Lobster since it opened its doors in 2012. Originally from Kendal, his ethos around using the best sustainable and seasonal seafood is second to none. Helpful when he could almost hang a fishing rod from his restaurant kitchen! Awarded their first Rosette in 2022.
